My son's father is Vietnamese, and I know more Vietnamese than I can count that can turn meat like this into awesomeness.. Um, Banh Mi! lol! Some use pork, but everyone I know uses the same cut of beef in this video.

Marco Contreras oooh big man kills his food and then makes his own fire like a Boy Scout. Chimney starters don’t need lighter fluid and are way easier and faster. It’s not a crutch it’s just better in every regard. Any professional would use one.

That HUGE slab of meat cost a dollar being from the UK that would cost around £7-10 aprox on the size (and decent marbling!) with cheap cuts of meat i cook it in the pressure/slow cooker and it becomes so tender making BANG curries or stews....that would not last 45m in my refrigerator let alone 45 days.....hell na!!!! 😋😋✌🏼️

I would like to see you try salt-curing this. Not the way you salted in a previous video. To properly salt cure, heavily salt both sides, and leave the steak at room temperature for 2-3 hours. The steak should be sweating at the end of the 2-3 hours, but not so much that it's losing all its juices. This will break down the protein bonds in the meat. The steak will caramelise, and should barely need to be chewed, and just melt in your mouth. Don't re salt it when cooking.

Most dry aged food sucks except fruits. Meat needs juice. If it doesn't have juice , your either poor and cant afford good steak or your rich and popous enough to think its a delicacy just because someone charges you more for it...lol

Look up how to actually dry age. No bag, on a rack, in a dedicated mini fridge, with a fan inside fridge. Edges don't get gross
